Oven-roasted Artichoke

roasted artichoke recipeMy friend and I dined at Rack’s in Miami, Florida and enjoyed a delicious appetizer made from roasted artichokes and a spicy aioli. It was delightful! Artichokes are seriously healthy. In Greece they are a staple. You don’t reap as many of the healthy benefits from simply enjoying artichokes hearts as conveniently sold in stores – fresh is best.

Artichokes are packed with fiber and a good source of vitamins and minerals, such as vitamins C and K, potassium, magnesium and manganese. At roughly 65 calories a serving (1 artichoke), artichokes are a natural diuretic, lower uric acid levels in the blood and aid in lowering cholesterol levels.
